Cilantro Lime Rice
2 Cups Rice, cooked
1/2 Cup butter (not margarine)
2 TBSP cilantro, finely chopped
juice of 1 lime
salt to taste
Mix together. Serve warm.
Chipotle Tortilla Chips
8 corn tortillas, each sliced into 8 wedges
1 lime
coarse sea salt
Fry up the wedges. When you take them out immediately sprinkle with salt, and squirt with juice.
